Chicken & Avocado Salad

Ingredients

  • 150 grams skinless chicken breast
  • 20 grams prosciutto, sliced
  • 1/2 baby cos lettuce
  • 1/4 avocado, sliced
  • 60 grams cherry tomatoes, halved
  • 5 grams parmesan, shaved
  • 1/2 tbsp olive oil
  • 1/2 tbsp balsamic vinegar

Instructions

  1. Preheat the oven to fan forced 180°C/200°C

  2. Wrap the chicken in the prosciutto and place on a lined baking tray – bake for 20-25 minutes – until chicken is cooked through. Remove from the oven and let cool for 10 minutes before slicing.

  3. Arrange your salad in a bowl and top with sliced chicken, olive oil and balsamic vinegar.
