Zucchini Fritters

These fritters are unbelievably easy to make, low calorie, and the perfect way to sneak in some veggies to any fussy eater.

Ingredients
  1. 1 large zucchini (400g)
  2. 2 large carrots (160g)
  3. 200g sweet potato
  4. 1 medium onion (85g)
  5. 2 eggs
  6. 1/4 cup gluten free flour
  7. 1 clove garlic – minced
  8. 1/4 cup fresh basil, chopped
  9. 1/4 cup fresh parsley and/or oregano, chopped
  10. 1 tablespoon lemon rind (DON’T FORGET THIS)
  11. 1/4 teaspoon onion powder
  12. 1 teaspoon Himalayan rock salt
  13. 1/4 teaspoon pepper
Instructions
  1. Grate the zucchini, carrot, sweet potato and onion with the large holed side of the grater.
  2. Place veges in a colander and squeeze out any moisture. This is important. If you miss this part you will need more flour, or psyllium husk to bind the mixture.
  3. Place vege in a large bowl and mix in all remaining ingredients.
  4. Heat 2 tablespoons of olive or coconut oil in a pan (medium/high heat “7”)
  5. Using hands, mould mixture into patties.
  6. Place in pan and cook until fritters look golden.
  7. Turn and repeat on other side.
Notes
  1. These are fabulous served with poached eggs and ham for breakfast.
  2. Or even a salad for lunch.
