Think eggs, bacon, chicken and sweet zucchini all combined into a nutritious and delicious breakfast (or lunch) meal.

Ingredients
  1. 2 cups cooked chicken (pull apart a bought cooked chook is quick)
  2. 1 large zucchini grated
  3. 1 red onion diced
  4. 4 cloves of minced garlic
  5. 8 eggs
  6. 4 – 6 pieces of bacon (or lean ham)
  7. 2 tablespoons fresh basil or parsley (or both)
  8. salt & pepper to taste
Instructions
  1. Preheat the oven to 175 – 180 degrees (depending on your oven)
  2. Grease a 20 x 30cm pan, or round glass baking dish (22cm ish)
  3. Saute your onions, bacon & garlic until onions start to caramalise. Then remove from heat.
  4. In a mixing bowl, combine eggs, cooked meat, (or ham) shredded zucchini, herbs, salt & pepper and mix well.
  5. Once mixed, add in the cooked onion and garlic & mix well.
  6. Pour the the mixture into your prepared dish and cook for 30 minutes or until cooked through. Prick middle with a cake tester, or toothpick to ensure cooked to your liking.
Notes
  1. * Feel free to add ingredients like mushrooms, capsicum and spinach for example.
  2. * This is brilliant to have for lunch with a salad or veges.
  3. * I slice pieces up when cold, wrap in baking paper and then glad wrap and pop in the freezer in a zip lock bag for future meals.
