Butter Chicken

Serves 4
This is the yummiest Butter Chicken recipe I have ever cooked. My son and I reckon it tops even the Indian restaurants we have been to.

Ingredients
  1. 120ml coconut oil
  2. 1 large onion
  3. 4 garlic cloves, crushed
  4. 2 teaspoons garam masala
  5. 1 teaspoon ground cardamon
  6. 1 teaspoon ground coriander
  7. 1 teaspoon ground ginger
  8. 1 teaspoon ground cumin
  9. 1/2 teaspoon paprika
  10. 1 – 2 pinches cayenne pepper (optional)
  11. 1 teaspoon ground turmeric
  12. 1 cinnamon stick ( this is my addition to the recipe, Don’t leave it out!)
  13. 3 tablespoons tomato paste
  14. 1 teaspoon sea salt
  15. 2 tablespoons lemon juice
  16. 1 x 400ml can coconut cream
  17. 700g chicken thigh fillets cut into bit sized pieces
  18. coriander to serve
Instructions
  1. Heat 4 tablespoons of coconut oil in a large saucepan over a medium heat.
  2. Add the onion & saute for 3 minutes until translucent. Turn the heat down to low & stir in the garlic & spices.
  3. Add the tomato paste & cook for 1 mintue.
  4. Add the salt, lemon juice, coconut cream & the remainder of the coconut oil and mix well.
  5. Turn the heat up to medium & bring the sauce to a simmer. Add the chicken & stir until well coated with the sauce.
  6. Cover the pan with the lid & cook, stirring occasionally for 20 – 25 minutes, or until the chicken is cooked through & the sauce has thickened.
  7. Garnish with coriander & serve with cauliflower rice.
Notes
  1. I leave mine on the stove top on low for a few hours, or alternatively put it in the slow cooker on low.
  2. Serve with veges.
  3. Delicious !
