Ingredients
  1. 1 cup almond meal
  2. 1/3 cup coconut oil
  3. 1 cup desiccated coconut, plus extra for rolling
  4. 1/2 cup vanilla protein powder (I like FitBits Pea Protein)
  5. 2 tablespoons cashew or almond butter (or peanut butter if desperate)
  6. 1 lemon – juice & zest
Instructions
  1. Place all ingredients in a food processor & process until mixture comes together.
  2. If too wet add more coconut, if too dry ad more cashew butter.
  3. Shape into balls and roll in extra coconut.
  4. Place in the fridge for at least 30 minutes before serving.
  5. Place balls in air tight container and store in fridge for up to 2 weeks. Or months in the freezer.
Notes
  1. You are looking at roughly 150 calories per ball, so do limit yourself.
